Ingredients (serves 2)
- 2 smoked mackerel fillets
- rosemary
- dill (chopped)
- basil (chopped)
- lemon (juice and zest)
- ricotta
- parmesan
- pasta (I used gluten free chickpea pasta)
- black pepper
Method
- Boil your pasta
- While it’s boiling, mix the rosemary, dill and basil in with some ricotta
- Once boiled, keep a little bit of pasta water in the pot with the pasta, return to the hob on a low heat and add your ricotta
- After a minute when the ricotta is all mixed through with the pasta water and looking saucy, add some lemon juice and black pepper
- Flake off the mackerel fillets, add all the flaked fish into the pot and mix through
- Add a handful of spinach, let it wilt and mix through
- Once you’ve added your pasta to a bowl, top with some parmesan, black pepper and a little bit of lemon zest
